Angela's Dipping Sauce
Angela is my beautiful Dutch friend who came up with this recipe. She is known for her fantastic desserts and her patience at scraping out the insides of young Thai coconuts to create those desserts. But, on this occassion she arrived at our dinner with this dip she had put together. I think she was inspired. It certainly tastes that way!

Ingredients:
5 or 6 tbsp. coconut water
3 tbsp. red onion
1 tbsp. garlic
2 teasp. sambal oelek or red curry paste
3 tbsp. soy sauce
2 tbsp. agave
3 tbsp. flaked coconut
1/2 tbsp. sesame oil
1 tbsp. lemon juice
1 teasp. ground coriander
pinch of lemongrass
slice of fresh ginger chopped
6 tbsp organic unsalted crunchy peanut butter
Method:
Blend all ingredients into a smooth sauce. If you prefer a thinner sauce, add more coconut water.
Sambal Oelek is a red chili paste found in the Asian section of the grocery store, or at an Asian market. It is super spicy!
