Pumpkin Spice Nice Cream
It's a week after Halloween as I write. The air is crisp and not too cold. You can see from the photographs that the leaves are quickly turning.
Pumpkin time!
Pumpkin, spices and fruit make up this ice cream/nice cream lunch I made myself today. The dried fruit and nuts added a great crunchy texture and I went extra bold on the cinnamon - because I simply love cinnamon!

Ingredients:
2 frozen bananas
1/2 can of pumpkin (just pumpkin, not pie filling)
1/2 an apple
2 pitted dates
1 tsp. cinnamon
1/2 tsp. pumpkin spice
1/2 tsp. vanilla
Whirl that all in a high speed blender using the tamper to push it down. You could also put it in a food processor and pulse it, scraping down the sides from time to time.
Top with:
Dried cranberries
Chopped hazelnuts
Dried mulberries
A spinkle of cinnamon
You could also top with:
Chopped apples
Chopped dates
Any other kind of nut or dried fruit you love.
